TEQUILA-
Tequila is a product of the flowering Blue Agave plant and can only be made and bottled in Mexico...by law. Most is made in the state of Jalisco. Blue Agave plants, a pale, silvery green-blue color, are not cactus, take 8-10 years to reach maturity, and can be up to 8' tall and 12' in diameter. The three types are:
Reposado (rested)-
Clear liquid placed in wooden storage tanks or barrels for more than 60 days, but less than one year.
Blanco/ Silver/ or Plata -
Clear liquid bottled or rested in stainless steel tanks for not more than 60 days. "Gold" tequila also falls into this category as it is simply the above treated with a burnt sugar (carmel) mixture.
Anejo(aged)-
Placed in wooden barrels not bigger than 600 litres for at least one year
